The New Year has me focusing on healthy recipes.
This one is so yummy you won't know it is so very good for you and your heart.
1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3/4 cup cooked rice (brown or white)
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 cans black beans, drained and rinsed
1 teaspoon fresh parsley ( can use dried)
salt and pepper to taste
Brown onion and garlic in olive oil.
Add cayenne pepper, salt and pepper, cumin, and rice.
Mix it all well.
Stir in black beans and cook until completely warm.
*It is very yummy served with fish.*
