I am confessing~ this is my first Lemon Meringue Pie. It is my husband's favorite so I gave it a try and I will admit it was not that hard. I was a bit intimidated ~ but I think passed the test. It disappeared quickly!
My old neighbor~Kelly~ would make me chocolate pie and lemon for my husband~ I finally asked for her recipe and I am so glad I did. Enjoy!
Pie Filling~
1 1/2 cups of sugar
1/2 cup cornstarch
1/8 teaspoon salt
4 egg yolks
1 3/4 cups of water
1/2 cup fresh lemon juice
3 Tablespoons of butter
1 teaspoon grated lemon rind
1 baked pie crust
- Combine first three ingredients in a large heavy saucepan; set aside
- Combine egg yolks, water and juice: stir into sugar mixture. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil 1 minute, stirring constantly. Remove from heat, stir in lemon rind and butter. Spoon into pastry shell.
- Spread Meringue over the top of hot filling~sealing the edge of the pastry.
- Bake at 325 degrees for 25-28 minutes.
Meringue Recipe~
3 egg whites
6 tablespoon sugar
1/2 teaspoon vanilla
Beat egg whites until they are frothy; gradually add sugar and continue to beat until stiff peaks form. Add vanilla and place on top of pie fulling.
