Autumn Fruit Salad~




What to do with all those apples? Here is a keeper~ so yummy!

Cast of characters~
  • 6 - 8 apples
  • 1 14oz can pineapple tidbits
  • 2 cups pineapple or pineapple/orange juice
  • 1/2 cup sugar
  • 3 Tbsp cornstarch
Here's what you do~
Pour pineapple tidbits and juice into a large bowl. 
Peel and chop apples into small sizes, adding to the pineapple as you chop. Stir in between to allow pineapple juice to coat apples~ this keeps them from turning brown.
In a small pot, bring 1 cup pineapple juice to boil.
 Place sugar, cornstarch and 1 cup juice in a tightly covered container and shake, then add to boiling juice, stirring until thick and smooth. Stirring constantly.  Then let it cool.
 Lastly~Pour chopped fruit through colander and then mix with sauce. 

Chill to before serving.
